The grapes are harvested when theyâre perfectly ripe, then theyâre destemmed, crushed and left to ferment for around 6 to 12 days. The result is a smooth red thatâs beautifully balanced and offers great value. (If youâre wondering, it takes its name from the Mistral, a wind that blows across the region!)
